The Catch & The Craft: Grilled Lobster with Herb Garlic Butter

Just as we respect the quality fruit nurtured by our artisan growers in Wilyabrup, a magnificent piece of local seafood demands the same level of care. This dish is all about letting the star ingredient shine. By pairing sweet, pristine ocean-fresh lobster with a beautifully considered herb-and-garlic butter, we achieve a layered balance of depth, freshness, and rich flavours.

Powerful yet approachable, this is the ultimate dish to enjoy on a long, sun-drenched afternoon alongside a glass of cold, crisp Moss Brothers Moses Rock Chardonnay.

The Elements

The Star:

1 Whole Cooked Lobster (approx. 700g – 800g), split lengthways, roe removed if desired.

The Component Blend (Herb Garlic Butter):

  • 100g Unsalted Butter, softened to a gentle, workable texture
  •  2 Garlic Cloves, minced fine (for a focused, structural kick)
  • 1 tbsp Fresh Chives, finely chopped
  • 1 tbsp Fresh Flat-leaf Parsley, finely chopped
  • ½ tsp Sea Salt Flakes
  •  A pinch of Cayenne Pepper (just a touch, like the subtle spice note in our reds)
  • 1 tbsp Olive Oil (for a smooth, elegant finish on the grill)

The Method

1. Preparation
Approach the lobster with precision. Using a heavy chef’s knife, cut the cooked lobster in half lengthwise through the centre. Gently pat the exposed flesh dry with a paper towel. This ensures the butter adheres beautifully to the meat, creating a perfect texture when it hits the heat.

2. Blending the Components
In a small bowl, combine your softened butter, minced garlic, finely chopped chives, parsley, sea salt, and cayenne pepper. Mix with care until the herbs are evenly incorporated. This is where we build the dish's drive and aromatic depth.

3. Dressing the Lobster
Generously spread about two-thirds of your prepared herb garlic butter across the exposed flesh of both lobster halves, ensuring it’s coated from head to tail.

4. Gentle Cooking
Heat a large skillet or barbecue over medium-high heat and brush it lightly with olive oil. Place the lobster halves flesh side down. Cook for 2 to 3 minutes, allowing the butter to melt, sizzle, and lightly caramelise the meat without overcooking it. The fruit of the sea must remain tender.

5. The Expressive Finish
Carefully flip the lobster halves over, so they are shell side down. Spoon the remaining herb garlic butter over the warm, glistening flesh, letting it melt into every crevice. Cook for a further 1 minute until the shell is warmed through and the aromas fill the air.

To Serve
