Deep red with a violet hue. Aromas of plum, subtle spice and cedar notes. Generous flavours of bramble fruit, toasty oak, and white pepper are framed by fine
tannins, leading to a long, full finish.
The fruit was selectively harvested and pumped to the fermenter with many whole
berries intact. The must was held cold for two days (cold-soaked) prior to
inoculation to extract color and flavor. Once inoculated, the ferments were pumped
over two to three times daily to extract further flavor and tannin from the skins.
Pressed prior to the completion of primary fermentation to ensure no harsh, bitter
tannins were extracted. Once the ferment was dry, the wine was transferred to the
barrel for malolactic fermentation, allowing the soft integration of the grape and oak
tannins. After the desired amount of barrel maturation, the wine was blended, fined,
and then bottled.
