2 x Moss Brothers Fidium Sauvignon Blanc 2019 

A vibrant sauvignon blanc with flavours of lemongrass, lime and bay leaf. The barrel fermentation adds brioche and macadamia flavours, along with a creamy texture. The racy acidity drives the wine through to a long, flavoursome finish.

The fruit was picked at optimum ripeness during the coolest period of the night to help retain the primary fruit flavours. Post fermentation the wine was left on lees until the balance between oak, lees and fruit characters was achieved. 

The Moss Brothers Fidium Chardonnay is perfectly paired with Homemade basil & macadamia pesto with pasta.

2 x Moss Brothers Fidium Shiraz 2019

An elegant and balanced Shiraz. The fruit shows good concentration, sweet red fruits and savoury spice. The oak adds layers of chocolate and mocha with soft round tannins that linger with good persistence.

The fruit was selective harvested and pumped to the fermenter with many whole berries intact. The cool temperature of the fruit allowed a slow start to fermentation, once inoculated, the ferments were pumped over and plunged twice a day, temperature was held around 25°C to prevent over extraction of tannins locked in the skins.

This rich and lavish Moss Brothers Fidium Shiraz will be perfectly paired with 28-day dry aged wagyu steak with pureed potatoes.

2 x Moss Brothers Fidium Cabernet Sauvignon 2019

An elegant palate, flavours of and mint, some savoury dry herb notes and layers of mocha and spice from oak maturation. The structure is medium to full bodied with fine tannins and great length. An elegant style with great varietal and regional character.

The fruit was selective harvested and pumped to the fermenter with many whole berries intact. The cool temperature of the fruit allowed a slow start to fermentation, once inoculated, the ferments were pumped over and plunged twice a day, temperature was held around 28°C. A portion of the wine was left on skins post fermentation to soften the tannins and achieve structure. This wine is perfectly paired with Spice roasted lamb leg with beetroot sauce.
