A juicy, yet savoury palate with blueberry, salted plums, star anise and dried bay. Fine, dusty tannins support the fruit, along with some toasty oak notes, which see the wine through to a long finish.
The fruit was harvested in the cool, early hours of the morning, then destemmed & crushed into static fermenters where it was inoculated with yeast selected for varietal expression. The results have been punchy aromatic whites, fine natural acidity, spicy shiraz and more elegant cabernets, perfectly paired with beef tataki.
